dc.description.abstract As regiões de altitude acima de 900 metros estão ganhando destaque na produção de uvas viníferas ou europeias (Vitis vinifera L.) para a elaboração de vinhos finos. O trabalho foi realizado em um vinhedo localizado na Área Experimental Agropecuária, da Universidade Federal de Santa Catarina, Campus de Curitibanos, localizado no município de Curitibanos/SC. Com o presente trabalho objetivou-se avaliar o efeito da desfolha na região do cacho na cultivar ‘Regent’ sobre os componentes de produção, maturação das bagas e qualidade de vinho. O delineamento experimental utilizado foi em blocos completamente casualizados, com 4 repetições, com duas plantas por unidade experimental. As avaliações foram realizadas no ciclo 2019/20. Os dados climáticos de temperatura média, máxima e mínima do ar e precipitação pluviométrica foram obtidos de uma estação meteorológica automática instalada ao lado do vinhedo. Os tratamentos consistiram em desfolhas na região do cacho realizadas nos estádios fenológicos grão chumbinho (DGC), grão ervilha (DGE) e a testemunha sem desfolha (SD). A evolução da maturação foi acompanhada semanalmente, desde o início da maturação das uvas (mudança de cor das bagas) até a colheita, determinando-se os teores de sólidos solúveis totais (SST em °BRIX), acidez total titulável (ATT) e pH. O desempenho produtivo foi mensurado no dia da colheita, avaliando-se a proporção de ramos produtivos, o número médio de cachos por ramo e a produção média por planta (kg/planta), comprimento, largura e peso do cacho, número de bagas/cacho e peso médio de 50 bagas. Para as microvinificações foram coletados aleatoriamente 1,5 kg de uvas por tratamento. Para os vinhos obtidos foram avaliados a acidez total titulável, acidez volátil, teor alcoólico, pH, teor de antocianinas e atividade redutora. Na colheita, os valores de SST, a ATT e o pH para os tratamentos com desfolha foram: DGE de 20,9 ° Brix, 95,7 meq/L e pH 3,31 e; DGC 20,45° Brix, 100,3 meq/L e 3,29, respectivamente. Para o tratamento sem desfolha, SD foi de 20,22° Brix, 103,4 ATT meq/L e pH 3,34, respectivamente. Os valores de SST e ATT foram significativamente superiores para os tratamentos com desfolha, quando comparados ao sem desfolha. Já para os componentes de produção analisados, não foram observadas diferenças estatísticas. O tratamento DGC resultou em valores superiores de polifenóis e antocianinas. Conclui-se que para a região avaliada, o manejo de desfolha influenciou na composição físico-química das uvas, bem como, dos vinhos de ‘Regent’, sendo que a época de desfolha ‘Grão Chumbinho’ apresentou incremento de antocianinas e polifenóis, além de atender os padrões de identidade e qualidade do vinho para elaboração de vinhos finos. pt_BR
dc.description.abstract The regions of altitude above 900 meters are gaining prominence in the wine production or European grapes (Vitis vinifera L.) for fine wine production. The work was carried out in a vineyard located in the Agricultural Experimental Area, of the Federal University of Santa Catarina, Curitibanos Campus, located in the municipality of Curitibanos / SC. This study aimed to evaluate the effect of defoliation in the region of the bunch in the 'Regent' variety, carried out at different phenological stages, on production components, berry ripening and wine quality. Experimental design was in completely randomized blocks, with 4 replications and 9 plants per experimental unit.The evaluations were carried out in the 2019/20 crop year. The climatic data of average, maximum and minimum air temperature and rainfall were obtained from an automatic meteorological station installed next to the vineyard. The treatments consisted of defoliation in the region of the bunch carried out in the Regent variety in the phenological stages grain pellets (DGC), peas grain (DGE) and the control without defoliation (SD). The evolution of maturation was monitored weekly, from the beggining of grape’s ripening (color change of berries) until the harvest, determining the levels of total soluble solids (SST in ° BRIX), total titratable acidity (ATT) and pH. Productive performance was measured on the day of harvest. The proportion of productive branches, the average number of bunches per branch and the average production per plant (kg / plant) were also estimated. Bunch length and width data, average bunch weight, number of berries / bunch and average weight of 50 berries were also obtained from bunches collected randomly after harvest. For microvinification, 1.5 kg of grapes were collected randomly per treatment. After harvesting, the grapes were kept refrigerated at 7 ° C for 24 hours, and they were vinified later using the microvinification protocol adapted from Ribereau-Gayon et al. (2006). For the wines obtained, the following were evaluated: total titratable acidity, volatile acidity, alcohol content, pH, anthocyanin content and reducing activity. In the last TSS reading in ° BRIX, total titratable acidity (ATT) and pH, the 'No Defoliation' treatment showed 20.22 ° Brix, 103.4 ATT meq / L and pH of 3.34 the 'Defoliation Grain Chumbinho' treatment 'presented 20.45 ° Brix, 100.3 ATT meq / L and 3.29 pH and the treatment' Defoliation Grain Pea 'obtained 20.9 ° Brix and 95.7 ATT meq / L and 3.31 pH, with an increase in SST in ° BRIX and a decrease in ATT meq / L for the 'Grão Chumbinho' and 'Grão Ervilha' defoliation seasons. The production components analyzed showed no statistical difference. Defoliation performed at the phenological stage “Grão Chumbinho” resulted in higher values of polyphenols, showing a statistically significant difference. For anthocyanins, the highest values were observed for defoliation performed in the phenological stage “grain chumbinho”. We conclude that in the Curitibanos region, Planalto Central de Santa Catarina, there was an increase in total soluble solids and a reduction in the total titratable acidity of the 'Regent' variety for the 'Grão Chumbinho' and 'Grão Ervilha' defoliation seasons. The production components of the ‘Regent’ variety were not influenced by defoliation treatments. Defoliation management influenced the physical and chemical characteristics of 'Regent' wine, with the defoliation season 'Grão Chumbinho' showing an increase in anthocyanins and polyphenols, in addition to meeting the standards of identity and quality of fine wine production. en
