Abstract: Esta tese aborda a síntese de ésteres de açúcar por meio de esterificação enzimática entre glicose e ácido láurico, com ênfase na aplicação de tecnologia supercrítica e no uso do solvente alternativo 2-metiltetra-hidrofuran-3-ona (MeTHF-3-ona). A tecnologia supercrítica mostrou-se altamente promissora para otimizar a eficiência e sustentabilidade do processo, permitindo controle refinado das condições reacionais. Estudos de equilíbrio de fases foram essenciais para caracterizar os sistemas binários e ternários de CO2, MeTHF-3-ona, glicose e ácido láurico, destacando o efeito antissolvente do CO2 sobre a glicose e a eficácia da MeTHF-3-ona como cosolvente, aumentando a solubilidade do ácido láurico e viabilizando a esterificação. As análises por FTIR e RMN confirmaram a formação do éster de açúcar a/ß-D-glicose-6-O-laurato, evidenciando a eficiência da reação. Embora a MeTHF-3-ona mostre ser uma alternativa promissora e sustentável aos solventes convencionais, mais estudos são necessários para validar integralmente suas vantagens. Assim, a integração de fluidos supercríticos e o uso de solventes verdes despontam como estratégias promissoras para a produção sustentável de ésteres de açúcar, com potencial de aplicação na indústria alimentícia e em outros setores, promovendo o desenvolvimento de processos químicos mais eficientes e ecologicamente responsáveis, especialmente na criação de surfactantes de base biológica.Abstract: This thesis addresses the synthesis of sugar esters by enzymatic esterification between glucose and lauric acid, with emphasis on the application of supercritical technology and the use of the alternative solvent 2-methyltetrahydrofuran-3-one (MeTHF-3-one). Supercritical technology has shown great promise for optimizing process efficiency and sustainability, allowing refined control of reaction conditions. Phase equilibrium studies were essential to characterize the binary and ternary systems of CO2, MeTHF-3-one, glucose, and lauric acid, highlighting the antisolvent effect of CO2 on glucose and the effectiveness of MeTHF-3-one as a cosolvent, increasing the solubility of lauric acid, and enabling esterification. FTIR and NMR analyses confirmed the formation of the sugar ester a/ß-D-glucose-6-O-laurate, evidencing the efficiency of the reaction. Although MeTHF-3-one is a promising and sustainable alternative to conventional solvents, further studies are needed to validate its advantages fully. Thus, the integration of supercritical fluids and the use of green solvents emerge as promising strategies for the sustainable production of sugar esters, with potential for application in the food industry and other sectors, promoting the development of more efficient and environmentally responsible chemical processes, especially in the creation of bio-based surfactants.
