Abate e inspeção de suínos: Relatório de Estágio

Abstract

O estágio curricular obrigatório do acadêmico Victor Hugo da Silva Vill, uma das exigências do Colegiado do Curso de Medicina Veterinária, foi realizado no Serviço de Inspeção Federal N° 828 no intuito de realizar uma aplicação prática dos conhecimentos teóricos adquiridos ao decorrer da graduação, com enfoque no abate, inspeção e processamento de suínos. O acompanhando das atividades desenvolvidas pelos funcionários do Serviço de Inspeção, o conhecimento do funcionamento das instalações frigoríficas bem como do fluxograma de abate de suínos e das etapas de processamento e industrialização dos produtos de origem animal, foram os pilares que serviram para a habituação do estagiário às medidas desempenhadas para garantia da inocuidade, qualidade e segurança alimentar.

The mandatory curricular internship of the academic Victor Hugo da Silva Vill, one of the Collegiate of the Veterinary Medicine Course's requirements, was completed at the Federal Inspection Service Nº 828, in order to do a practical application of the theoretical knowledge acquired throughout graduation; focusing on the butchery, inspection and processing of swines. The monitoring of the activities carried out by the Inspection Service staff, the knowledge of refrigeration facilities operation, as well as the pigs' butchery flowchart and the processing and industrialization stages of animal products were the pillars which served as the intern habituation to measures taken to ensure food innocuity, quality and safety.
